Creamy Pumpkin Soup

Updated: Aug 14, 2019

Yes, the winds are beginning to shift and the sun's setting earlier and earlier... that means the crisp smell of apples in the air and pumpkins on the ground is not too far away. Let's make the very best of it on HomeGrown...

Do you love a good pumpkin soup? Oo, with pepita seeds (fancy word for pumpkin seeds) to garnish on top?

We must tip our farmer's hat to Nagi who is the source of this good-to-go-good-to-grow pumpkin soup: (click link for specific directions)

1. Place peeled pumpkin, onion, garlic, broth and water into a pot;

2. Boil rapidly for 15 minutes until pumpkin is very tender;

3. Use a stick blender or transfer to blender to blitz smooth; and.

4. Adjust salt and pepper to taste, then add either milk OR cream – whichever you prefer.
